Lowell Sun, December 10, 2009

This front page story tells how 25-year-old Founder & CEO Emily Dubner “left the corporate world to traffic in a world of rich brownies, cookies and a slew of other tasty baked goods and snacks. She’s a businesswoman, but with a social conscience.” Read the full article here.

Chocolate Covered Strawberries for Harboring Hearts

At Baking for Good, we love special requests. So when a brand new nonprofit, Harboring Hearts, invited us to be involved in their kickoff event, we jumped at the chance. When we thought about what to make for their gala, dark chocolate covered strawberries immediately came to mind. 300 of them!

Turns out making 300 chocolate covered strawberries doesn’t take all that long (took us about 2 hours, start to finish). Which means you have no excuse not to whip up a dozen of them for dessert every now and then! Super easy. Here’s how:

Ingredients:

Strawberries

Chocolate - we like dark / semi-sweet. Approximately 1 oz per 10 strawberries.

Instructions

Place a piece of parchment or wax paper on a tray or plate.

Put the chocolate into a heatproof bowl that will rest on top of a saucepan (if you have one, a double boiler is perfect for this). Fill the saucepan (or the bottom part of your double boiler) with an inch or two of water and bring to a simmer over medium heat. Set the bowl of chocolate over the water, making sure the water doesn’t touch the bottom of the bowl. Stir the chocolate as it melts, and as soon as it has all melted, remove it from the heat.

Dip each strawberry into the chocolate, one at a time, and then place on the parchment paper. Once you’ve filled the tray, place it in the refrigerator for 20-30 minutes to set the chocolate.

Serve and enjoy!

Sweet Potato Orzo with Chicken and Mushrooms
Over the summer, I picked up this sweet potato orzo from Pike Place Market in Seattle. Last night, with fall winding down, I figured it was about time I used it. This recipe, adapted from this one, would work with any kind of orzo, but I’m partial to ones with interesting flavors.
Ingredients:

1/4 lb orzo
2 cups vegetable or chicken broth (optional)
1 Tbsp olive oil
1/2 cup yellow or red onion, chopped
8 oz mushrooms, sliced
1/2 tsp thyme, preferably fresh
2 boneless, skinless chicken breasts, cut into bite-size pieces
2 cloves of garlic, minced
1/2 cup Parmesan cheese, grated
1/4 cup fresh parsley, chopped

Cook the orzo in water (or in a combination of water and broth, if you’re using it) according to instructions. Drain, rinse, and set aside.
Heat oil in a large skillet over medium-high heat. Add chopped onion, mushrooms, and thyme. Sauté for 5 minutes or until the onion is tender and lightly browned. Add the chicken and salt and pepper to taste, then sauté 7-8 minutes or until chicken is cooked through. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove skillet from the heat, then add the cooked orzo, Parmesan, and parsley to the chicken mixture and toss. Taste and re-season with salt and pepper if needed.
